Make these fritters gluten free by using gluten-free all-purpose flour.
Don’t feel like carrots? Feel free to use any other root vegetables (onions, sweet potatoes, turnips, or beets).
Instead of ham, you could use other or any other protein you have leftover such as pulled pork, smoked chicken, cooked beef or even tofu.
Don’t make the oil too hot, otherwise the fritters will burn before fully cooked. Use a thermometer to heat the oil to about 350°F. The oil should also not be too cold, otherwise the fritters will absorb too much oil, making them greasy.
