- In a heat-proof bowl, combine sugar, corn syrup, and water.
- Place the bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn’t touch the water.
- Whisk continuously until the mixture reaches 160°F (71°C).
- Remove the bowl from the heat and transfer it to a stand mixer.
- Beat on high speed until stiff peaks form, about 6 minutes.
- Beat in vanilla extract.

Assemble the Cake:
- Frost the cooled cake layers with the prepared seven-minute frosting.
- Decorate with additional coconut flakes or other desired toppings.
Tip: For a more intense coconut flavor, add toasted coconut flakes to the frosting.
