Turn oven on high heat. Set oven temperature to 350°F, or 175°C. Spray or line a baking dish that is 9×13 inches.
Mix the dry ingredients: In a another bowl, mix the flour, baking soda, and salt.
Mix together the dry and wet components. Slowly incorporate the dry ingredients into the wet mixture while stirring constantly.
Mix in the shredded coconut.
Coat the baking dish with cooking spray. Pour batter into the dish and bake for 25 to 30 minutes, or until a toothpick inserted comes out clean.
Allow it cool entirely before slicing and serving.
