Instructions:
Step 1
In a large saucepan or Dutch oven, melt the butter over medium-low heat.

Add the green onion and celery, and sauté, stirring occasionally, until softened.
Step 3
Stir in the flour until well combined with the vegetables and butter. Cook for about 2 minutes, stirring constantly.
Step 4
In a separate saucepan, gently heat the milk over medium heat.
Step 5
Gradually pour the warm milk into the butter-flour mixture, stirring continuously until the mixture thickens.
Step 6
Add the black pepper, tomato paste, and heavy cream. Stir well.
Step 7
If you prefer a smooth bisque, blend the mixture in a blender or food processor, then return it to the pot.
Step 8
Stir in the crab meat, shrimp, and a splash of sherry (optional). Let it simmer to heat through.
Step 9
Serve the bisque hot.
