  • 30 milliliters (2 tablespoons) lemon juice
  • 1/3 teaspoon turmeric (optional, for color)
  • 6 egg yolks
  • 24 grams (2 tablespoons) potato starch (or cornstarch)
  • 200 milliliters (4/5 cup) milk
  • 250 milliliters (1 cup) fresh cream (33–38% fat)

Instructions:

1. Prepare the Bananas:

  • Mash the Bananas: Begin by mashing the ripe bananas until smooth. Set them aside.

2. Cook the Bananas:

  • Melt Butter: In a medium saucepan over medium heat, melt the butter.
  • Add Bananas and Lemon Juice: Stir in the mashed bananas and lemon juice. Mix until combined.
  • Add Turmeric: If using turmeric for a brighter color, add it now and stir well.
