1. cook the pasta: boil pasta according to package instructions. drain and set aside.
2. season and cook shrimp: toss shrimp with cajun seasoning. heat butter and olive oil in a pan over medium heat. cook shrimp for 2-3 minutes per side until pink. remove and set aside.
3. make the sauce: in the same pan, add garlic and sauté for 30 seconds. pour in heavy cream and chicken broth, stirring to combine.
4. add cheese & veggies: stir in parmesan cheese, diced tomatoes, and bell peppers. let simmer for 3-5 minutes until thickened.
5. combine everything: add pasta and shrimp back to the pan, tossing to coat in the sauce. adjust seasoning if needed.
6. garnish & serve: sprinkle with parsley and serve hot!
