Cook the shrimp: Heat olive oil in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook for about 2 minutes per side until pink and opaque. Remove from the skillet and set aside.
Make the sauce: In the same skillet, melt butter and sauté garlic until fragrant (about 30 seconds). Stir in heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes. Let it simmer for 2-3 minutes, stirring occasionally.
Add spinach: Toss in the chopped spinach and stir until wilted.
Combine everything: Return the cooked shrimp to the skillet and coat them in the creamy garlic parmesan sauce. Let everything heat through for 2 minutes.
Serve and enjoy! Garnish with extra parmesan and fresh parsley if desired. Serve over pasta, rice, or with crusty bread.
