Directions:
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly coat it with non-stick spray.
2. In a large bowl, mix the chopped broccoli, cheddar cheese, breadcrumbs, eggs, Parmesan, onion, garlic, salt, pepper, and paprika until fully combined.
3. Scoop and shape about 1 tablespoon of the mixture into small balls. Arrange them evenly on the prepared baking sheet.
4. Spray the tops of the bites lightly with cooking spray to help them crisp in the oven.
5. Bake for 20–25 minutes or until golden brown and crispy.
6. Cool briefly before serving. Enjoy them warm as a healthy snack or party finger food!
