Instructions
Line the crock pot with a large piece of heavy-duty foil, spray with cooking spray, and set aside.
In a large bowl add 1 small sweet onion, peeled and grated, 1 cup whole milk, 2 large eggs, lightly beaten, 2 Tablespoons light brown sugar, packed, 1 Tablespoon ketchup, 1 Tablespoon bbq sauce, 1 Tablespoon Worcestershire sauce, 1 Tablespoon garlic powder, 1 teaspoon kosher salt and ½ teaspoon black pepper.

Whisk this mixture until fully combined.

Add in 1 cup plain panko breadcrumbs. Stir in the breadcrumbs until mixed well.

Next, add 2 pounds (85/15) ground beef.

Using your clean hands, mix everything together until well combined but do not over mix.

Add the mixture to the aluminum foil in the slow cooker, and form it into a long oval shape, set aside.

In a small bowl add ½ cup ketchup, ½ cup bbq sauce and ¼ cup light brown sugar, packed. Whisk this mixture together to make the glaze.

Brush half of the glaze on top of the meatloaf. Cook on low for 6 hours or until the internal temperature reaches at least 165°F.

Take the meatloaf out of the crockpot using the foil to help lift it out. Place on a sheet tray and brush the remaining glaze on top.

Optional: Broil in the oven until the glaze is bubbly and starts to brown slightly. Serve topped with fresh chopped parsley, for garnish.

Using a leaner meat such as an 85/15 like we did or this recipe helps with excess grease.
Do not over mix you meat mixture, this will make the meatloaf tough.
This Crock Pot Meatloaf can also be made in the oven, mix as directed then shape into a patty on a lined baking pan and bake at 350 for 60 minutes until internal temperature reaches 160 degrees F.
