- In a large pot, place the chicken pieces and fill it with water until half-covered. Cook over low heat for 10 minutes with the lid on.
- While the chicken is cooking, prepare two large bowls. In the first bowl, combine flour, cornstarch, minced garlic, and seasoning. Stir well. In the second bowl, mix eggs, milk, mustard, salt, and pepper using a fork.
- After the cooking time, remove the chicken from the water and pat it dry. Dip each piece first into the flour mixture, then into the egg mixture, and again into the flour. Ensure each piece is well-coated and refrigerate for a couple of minutes.
- In a stockpot or deep skillet, heat enough oil to submerge the chicken over medium heat.
- Once the oil is hot, take the chicken out of the refrigerator and fry 2 to 3 pieces at a time. Fry until the chicken is nicely browned on all sides, being careful not to burn the chicken or the oil.
- After frying, let the chicken pieces rest on a plate with absorbent paper to remove excess oil.
