Instructions:
1. Preheat your oven to 175°C.
2. Line a 23cm x 10cm x 7cm loaf pan with parchment paper and grease it with butter or cooking spray.
3. Prepare the banana puree: In a large bowl, mash the bananas until smooth.
4. Combine the wet ingredients: Add melted butter, brown sugar, white granulated sugar, eggs, milk, and vanilla essence to the mashed bananas. Mix until well combined.
5. Mix the dry ingredients: In a separate bowl, whisk together the cake flour, baking powder, bicarbonate of soda, ground cinnamon, and salt.
6. Combine wet and dry ingredients: Gradually mix the dry ingredients into the wet mixture until just combined. Avoid overmixing.
7. Pour into the pan: Transfer the batter into the prepared loaf pan and level the surface.
8. Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
9. Cool: Allow the banana cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
