Ingredients:
2 cups graham cracker crumbs
½ cup melted butter
16 oz cream cheese, softened
1 cup mango puree
1 cup heavy cream, whipped
½ cup sugar
1 tablespoon gelatin, dissolved in ¼ cup water
Instructions:
Mix graham cracker crumbs and melted butter; press into a springform pan and chill.
Beat cream cheese and sugar until smooth; fold in mango puree and dissolved gelatin.
Gently fold in whipped cream.
Pour mixture over the crust and refrigerate for 4-6 hours or until set.
Garnish with mango slices before serving.

3 ripe mangoes, peeled and diced
1 tablespoon lime juice

Instructions:

Serve immediately for soft sorbet, or freeze for another hour for a firmer texture.

¼ cup goat cheese crumbles

Instructions:
Grill mango slices for 2-3 minutes on each side until caramelized.
Arrange greens, grilled mango, goat cheese, and nuts on a plate.
Drizzle with olive oil and balsamic vinegar, and season with salt and pepper.

3 ripe mangoes, diced
1 cup sugar
½ cup white vinegar

Instructions:
Combine all ingredients in a saucepan and bring to a boil.
Reduce heat and simmer for 20-30 minutes, stirring occasionally, until thickened.

Soak rice in water for 4 hours, then steam until tender.
Heat coconut milk and sugar in a saucepan, stirring until sugar dissolves.
Mix half the coconut milk with the steamed rice and let it absorb for 10 minutes.
Serve rice with mango slices and drizzle with remaining coconut milk. Sprinkle sesame seeds on top if desired.
