  1. Prepare the Pan: Line an 8×8-inch baking dish with parchment paper, allowing some overhang for easy fudge removal later.
  2. Combine Ingredients: In a medium saucepan over medium heat, mix the sugar, evaporated milk, butter, and salt. Stir until the sugar has dissolved completely.
  3. Boil: Bring the mixture to a steady boil, stirring constantly. Once boiling, lower the heat slightly but maintain a simmer for about 4-5 minutes, continuing to stir.
  4. Off the Heat: Remove the saucepan from the heat. Quickly stir in the marshmallows, chocolate chips, optional pecans, and vanilla extract.
  5. Mix to Melt: Stir vigorously for about a minute or until the marshmallows have fully melted and the mixture is smooth.
  6. Pour and Cool: Transfer the fudge mixture into the prepared baking dish. Feel free to garnish with extra marshmallows or pecans if desired. Allow to cool at room temperature, then chill in the refrigerator for 2 hours, or until firm.
  7. Slice and Serve: Once set, lift the fudge out using the parchment paper overhang, cut into squares, and enjoy!
