Heat the milk in a saucepan until it’s very hot, but not boiling. Turn off the heat.
Add the vinegar or lemon juice and mix slowly. You’ll see how the milk begins to curdle and form lumps.
Cover the saucepan and let it sit for about 10 minutes.
Strain through a clean cloth or tea towel over a large sieve to separate the whey from the solids.
