Instructions:
1. Sauté the Base: Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic and sauté until the onions are translucent and fragrant. This forms the flavor base of your soup.
2. Add the Vegetables: Toss in the carrots, celery, zucchini, and bell pepper. Stir everything together and cook for about 5 minutes until the vegetables start to soften slightly.
3. Simmer with Seasonings: Add the diced tomatoes, vegetable broth, oregano, and basil to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes. The slow cooking process allows all the flavors to meld beautifully.
4. Season and Serve: Towards the end of the cooking time, add salt and pepper to taste. If you like, you can also stir in some chopped spinach or kale during the last few minutes for an extra boost of color and nutrients.
