Directions
. Place the beef chuck roast into a 6-quart or larger slow cooker.
. Sprinkle the roast with salt, pepper, and smoked paprika.
. Place the garlic cloves on top of the roast and add the sliced red onion.
. Pour the Italian dressing and beer over the roast, then place the bay leaves on top.
. Cover the slow cooker and set it to cook on high for 6 hours or on low for 8 to 10 hours. Do not open the lid during the cooking time.
. After cooking, remove and discard the bay leaves.
. Shred the meat using two forks, smash the garlic with the back of a fork, and stir into the shredded meat. Discard any excess fat and drain off the grease.
. Lay out the bottoms of the Hawaiian slider buns on a tray. Top with the shredded meat and add a slice of Colby jack cheese on each.
. Place under the broiler in the oven just until the cheese is melted.
. Cover with the tops of the Hawaiian buns.
. Serve the sliders hot and enjoy the tender, flavorful beef with melted cheese on soft, sweet buns, enhanced with a smoky twist. Perfect for a gathering or a satisfying meal!
