Ingredients:
- 1–4 pound beef chuck roast
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 2/3 cup beef stock
- 1 cup stout or porter beer (or your preferred brew)
- 2 bay leaves
- 2 fresh thyme sprigs
- 2 carrots, peeled and cut into chunks
- 2 stalks of celery, diced
- Optional: 2 teaspoons cornstarch to thicken the sauce
