1. In a bowl, whisk together orange juice, lemon juice, soy sauce, honey, grated ginger, garlic, black pepper, and salt.
2. Heat the olive oil in a skillet over medium-high heat. Sear the pork chops on each side until golden brown, about 2-3 minutes per side.
3. Place the seared pork chops in the slow cooker and pour the citrus ginger sauce over the top.
4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pork is tender and cooked through.
5. Once the pork is done, remove the chops from the slow cooker and set aside. Carefully pour the cooking liquid into a saucepan.
6. In a small bowl, whisk together cornstarch and water to create a slurry. Add the slurry to the saucepan and bring to a simmer over medium heat, stirring constantly until the sauce thickens.
7. Return the thickened sauce to the slow cooker with the pork chops to keep them warm, or serve the sauce over the pork chops on your serving platter.
Variations & Tips
For a touch of heat, add a teaspoon of crushed red pepper flakes to the sauce. You can also substitute lime juice for the lemon juice for a different citrus profile. If you prefer a sweeter glaze, add an extra tablespoon of honey. For a richer flavor, marinate the pork chops in the sauce for a few hours before cooking. This recipe works well with chicken thighs or beef short ribs as well.
