For the Chicken:
Chicken breast – 1 kg
Salt – 3/4 tsp
Black pepper – 1/2 tsp
Flour – 4 tbsp
For the Vegetables and Sauce:
Medium potatoes – 6 pieces
Onion – 1 piece
Garlic cloves – 3 pieces
Kapia (red bell pepper) – 2 pieces
Cherry tomatoes – 100 grams
Tomato puree – 1 cup
Water – 1/2 cup
Thyme – 1/2 tsp
Basil – 1/2 tsp
Rosemary – 1/2 tsp
Salt – 3/4 tsp
Mozzarella cheese – 200 grams
Parsley (for garnish)
Instructions:
Prepare the Chicken:
Wash the chicken breasts and pat them dry with a paper towel.
Season both sides of the chicken pieces with salt and black pepper.
Lightly coat the chicken with flour on all sides.
Fry the Chicken:
Heat some oil in a large skillet over medium heat.
Fry the chicken until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and set aside.
Prepare the Vegetables:
Peel and cut the potatoes in half or quarters, depending on their size.

Cut the cherry tomatoes in half.

Add the Kapia peppers and cook for an additional 2 minutes.
