  1. Prepare the Potatoes:
    • Peel and finely grate the potatoes.
    • Place the grated potatoes in a large bowl and cover them with water. Mix by hand and set aside.
  2. Prepare the Onion and Pepper Mixture:
    • Thinly slice the onion.
    • Seed and chop the red bell pepper into bite-sized pieces.
    • Heat the oil in a skillet over medium-high heat. Add the sliced onion and sauté for a few minutes.
    • Add the chopped red pepper, stir to combine, and let it simmer for 5-7 minutes. Remove from heat.
  3. Make the Potato Mixture:
    • Drain the water from the grated potatoes and press out any excess moisture.
    • Place the potatoes in a large bowl.
    • Crack the eggs into the bowl with the potatoes and add salt, black pepper, nutmeg, and marjoram. Mix thoroughly.
  4. Assemble and Bake:
    • Preheat your oven to 180°C (350°F).
    • Lightly grease a baking dish.
    • Spread the potato mixture evenly in the dish.
    • Distribute the onion and pepper mixture evenly over the potatoes.
    • Optionally, top with grated cheese.
    • Bake in the preheated oven for about 50 minutes, or until the potatoes are tender and the top is golden brown.
