Arrange chicken breasts, pineapple chunks, red bell pepper, green bell pepper, and red onion on a sheet pan. Drizzle with the prepared sauce and toss to coat evenly.
Bake in the oven for 20–25 minutes, or until the chicken is cooked through and vegetables are tender.
Serve hot, optionally over cooked rice.
