Tips for Perfect Pasteis de Nata
Thaw pastry in the fridge overnight for best results. Don’t let it sit at room temperature too long, or it won’t puff properly.

Chill the rolled dough before slicing and shaping to help it keep its spiral structure.

The custard should be slightly burnt on top. If needed, finish under the broiler for 1–2 minutes (watch closely!).
