Instructions:

  1. Preheat Oven: Preheat your oven to 375Β°F (190Β°C). Grease a muffin tin or line it with paper liners.
  2. Cook the Sausage: In a skillet over medium heat, cook the sausage until browned and cooked through. Break it up into crumbles as it cooks. Drain any excess fat and set aside to cool slightly.
  3. Mix Ingredients: In a large mixing bowl, combine the cooked sausage, lightly whisked eggs, grated cheddar cheese, and baking mix. Stir until well combined.
  4. Fill Muffin Tin: Spoon the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  5. Bake: Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and Store: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Store the muffins in an airtight container in the refrigerator or freeze them for longer storage.
