Strain the infusion and sweeten with honey to taste.
Prepare the gelatin
In a separate bowl, hydrate the gelatin in 1/2 cup of cold water.
Let stand for 5 minutes until a fluffy texture forms.
Melt the gelatin in a double boiler or microwave for 15 seconds.
Mix and Refrigerate
Stir the melted gelatin into the hibiscus infusion, mixing well.
Pour the mixture into individual molds or containers.
Refrigerate for 4 hours or until gelatin is firm.
