1. In a bowl, beat the eggs with the milk, salt and pepper.
2. Dip the slices of bread in the egg and milk mixture, soaking them well.
3. Heat the olive oil in a frying pan over medium heat and brown the slices of bread on both sides until golden brown.
4. Spread a tablespoon of pesto on each slice of French toast.
5. Cut the tomatoes and mozzarella into slices.
6. Arrange the tomato and mozzarella slices on the French toast slices.
7. Bake under the grill for 5 minutes, until the mozzarella is melted and lightly browned.
8. Garnish with fresh basil leaves before serving.
