Instructions:
1. Mix the dough base:
In a mixing bowl, combine the sugar cookie dough with ½ cup of Fruity Pebbles cereal. Mix until evenly combined.
2. Form the crust:
Press two-thirds of the cookie dough mixture into the bottom of a greased 8×8-inch baking pan to form an even layer.
3. Make the cheesecake layer:
In a separate bowl, beat together the cream cheese, granulated sugar, egg, and vanilla extract until smooth and creamy.
Pour evenly over the cookie crust.
4. Top it off:
Crumble the remaining cookie dough over the cheesecake layer.
Sprinkle the remaining ½ cup of Fruity Pebbles on top.
5. Bake the bars:
Preheat the oven to 350°F (175°C).
Bake for 25 to 30 minutes, or until edges are golden and the center is set.
6. Cool and chill:
Let cool completely, then refrigerate for at least 1 hour to firm up before slicing.
