Season the pork chops with salt, pepper, and smoked paprika on both sides. Let them sit at room temperature for about 15 minutes.
Heat olive oil in a large skillet over medium-high heat.
Once hot, sear the pork chops for about 3–4 minutes per side, depending on thickness, until golden brown and nearly cooked through.
Lower the heat to medium. Add the butter, garlic, and fresh herbs to the pan.
Tilt the pan and spoon the melted garlic butter over the pork chops repeatedly for 1–2 minutes, basting to enhance flavor and finish cooking.
Check for doneness (internal temp should be 145°F / 63°C), then remove from heat.
Let rest for 3–5 minutes before serving.
