- Prepare the Dry Ingredients:
In a large mixing bowl, combine the dry yeast, sugar, salt, and flour. Mix well to evenly distribute the ingredients. - Make the Dough:
Add olive oil and water to the dry ingredients and mix thoroughly until a sticky dough forms. Knead the dough for a few minutes until it comes together smoothly. Cover the bowl with a clean cloth or plastic wrap and place it in a warm spot. Let it rise until it has doubled in size, which should take about 3 hours. - Prepare the Baking Sheet:
Once the dough has risen, coat a baking sheet with a bit of olive oil to prevent sticking. - Incorporate the Cheese:
Crumble the feta cheese and fold two-thirds of it into the risen dough. Make sure the cheese is evenly distributed throughout the dough. - Shape the Flatbread:
Roll out the dough on the prepared baking sheet, spreading it evenly to the edges. Preheat the oven to 200°C (392°F). - Add Toppings:
Sprinkle the remaining one-third of the cheese (both feta and grated Kasseri) over the top of the dough. Add a generous amount of fragrant oregano for added flavor. - Bake the Flatbread:
Place the baking sheet in the preheated oven and bake for about 40 minutes or until the flatbread is golden brown and the cheese is melted and bubbly. - Serve:
Allow the flatbread to cool slightly before slicing. Serve warm and enjoy the delicious combination of soft dough, melted cheese, and fragrant oregano.
