Directions:
In a large bowl, combine olive oil, ranch seasoning, garlic powder, onion powder, paprika, pepper, and salt. Mix well.
Add the chicken pieces to the bowl and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
Preheat your grill to medium-high heat.
Thread the marinated chicken onto skewers, spacing pieces slightly apart for even cooking.
Grill skewers for 8–10 minutes, turning occasionally, until chicken is cooked through and has grill marks.
During the last 2 minutes of grilling, sprinkle Parmesan cheese over the skewers and allow it to melt slightly.
Remove from grill, garnish with chopped parsley if desired, and serve hot.
