Instructions:
1. Warm the skillet over medium heat, adding the olive oil. Toss in the onion and garlic, cooking for 2-3 minutes until they release their aroma and the onion turns soft.
2. Add the sweet potatoes and stir well. Cook for about 10 minutes, stirring every so often, until the sweet potatoes start to soften.
3. Crumble the ground turkey into the skillet. Break it apart with your spoon or spatula and cook for 5-7 minutes until fully browned and no longer pink.
4. Season generously with smoked paprika, cumin, salt, and pepper. Mix in the diced bell pepper and cook for another 3-4 minutes, allowing it to soften.
5. Fold in the chopped spinach and let it wilt for about 2 minutes. The vibrant greens will add a fresh touch to your dish!
6. Remove from heat and sprinkle with fresh parsley if you’d like. Serve warm and enjoy the hearty flavors.
