- 1 small head of cauliflower, cut into small florets
- 1 large carrot, grated
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 3 cups vegetable or chicken broth
- 1 cup milk or cooking cream
- 2 tablespoons flour (optional for thickening)
- 2 tablespoons butter or oil
- Salt and pepper to taste
- Chopped parsley for garnish
Preparation Instructions
- Sauté Aromatics: Heat butter or oil in a pot over medium heat. Add onion and garlic, and sauté until softened and fragrant.
- Cook Vegetables: Add grated carrot and cauliflower florets to the pot. Stir and cook for a few minutes to blend the flavors.
- Thicken (Optional): Sprinkle flour over the vegetables and stir well for one minute to thicken the soup.
- Simmer: Pour in the vegetable or chicken broth, bring to a boil, then reduce the heat. Let the soup simmer for 15-20 minutes until the vegetables are tender.
- Add Creaminess: Stir in milk or cooking cream, and gently heat the soup without boiling to preserve the creamy texture.
- Season and Serve: Season with salt and pepper to taste. Ladle the soup into bowls, garnish with chopped parsley, and serve warm.
