- Prepare the Batter: In a blender, combine flour, milk, eggs, chopped spinach, salt, pepper, and melted butter. Blend until the mixture is smooth and well combined.
- Rest the Batter: Allow the batter to rest for at least 30 minutes. This gives the flour particles a chance to absorb the liquid, resulting in a smoother batter.
- Cooking the Crepes: Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter to coat the pan.
- Pour and Swirl: Pour about 1/4 cup of the batter into the center of the hot pan. Quickly lift the pan off the heat, tilting and rotating it to spread the batter thinly across the bottom.
- Cook Until Edges Brown: Cook the crepe for about 1-2 minutes or until the edges start to brown. Use a spatula to flip the crepe and cook for an additional 1-2 minutes on the other side.
- Repeat: Repeat the process with the remaining batter, adding a small amount of butter to the pan before each crepe.
- Serve Warm: Once cooked, stack the crepes on a plate. Serve them warm with your favorite filling, such as sautéed vegetables, cheese, or a creamy sauce.
