Instructions
Step 1: Preheat Oven
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Step 2: Cook Beef Mixture
In a large skillet, heat oil over medium heat. Add onion and garlic; sauté until softened. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
Step 3: Combine Ingredients
Stir in diced tomatoes (with juice), uncooked rice, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
Step 4: Transfer and Add Cheese
Pour the beef and rice mixture into the prepared baking dish. Sprinkle shredded cheddar cheese evenly over the top.
Step 5: Bake
Cover the dish with foil and bake for 35–40 minutes, or until the rice is tender and the liquid is absorbed.
Step 6: Optional Topping
Remove foil, add extra cheese on top if desired, and bake uncovered for an additional 5 minutes until cheese melts and bubbles.
Step 7: Serve
Let cool for a few minutes before serving. Enjoy with a side salad or steamed vegetables
