Instructions:
1. Prepare the ingredients:
Begin by chopping the onion, dicing the carrot and tomato, and mincing the garlic. Peel and slice the potatoes for later use.
2. Cook the ground beef:
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until softened. Incorporate the ground beef, cooking until it browns evenly. Season with salt, pepper, chili powder, thyme, and dried parsley.
3. Add vegetables and stock:
Stir in the minced garlic, diced carrot, tomato, and frozen peas. Sprinkle the flour over the mixture and stir to combine, allowing it to thicken slightly. Pour in the vegetable stock and let the mixture simmer for 5-7 minutes.
4. Layer the potatoes:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish. Begin by layering the sliced potatoes at the bottom, followed by the ground beef mixture. Continue layering, finishing with a top layer of potatoes. Lightly season the top with salt and pepper.
5. Bake:
Cover the dish with foil and bake for 30 minutes. Then, uncover and bake for an additional 15-20 minutes, or until the potatoes are tender and golden brown.
6. Serve:
Once out of the oven, garnish with freshly chopped parsley for added color and flavor, if desired. Serve hot and enjoy this comforting meal with family or friends.
