Instructions:
1. Prepare the vegetables:
Preheat your oven to 400°F (200°C).
In a large bowl, combine the broccoli, cauliflower, bell peppers, cherry tomatoes, olive oil, Italian seasoning, salt, pepper, and chopped green Spanish onion. Toss to coat evenly.
Spread the vegetables in a 9×13 inch baking dish.
2. Make the egg mixture:
In a medium bowl, whisk together the eggs, milk, flour, salt, pepper, and chopped Spanish leaves until smooth.
3. Assemble and bake:
Pour the egg mixture over the vegetables in the baking dish.
Bake for 25-30 minutes, or until the vegetables are tender and the egg mixture is set.
Tips:
You can use any combination of vegetables you like.
If you want a creamier egg mixture, you can add an extra 1/4 cup of milk.
