1. Prepare the apples
Peel and thinly slice the apples.
In a bowl, mix the apples with the lemon juice, brown sugar and cinnamon. Let it cook for 10 minutes.
2. Caramelize the apples
Heat the butter in a non-stick pan over medium heat.
Add the apples and cook for 5-7 minutes, stirring occasionally, until soft and slightly caramelized.
3. Prepare the puff pastry
Roll out the puff pastry on a baking sheet lined with parchment paper.
Using a knife, lightly score a 1cm border along the sides (do not cut all the way through).
4. Fill and bake
Spread the caramelised apples evenly over the puff pastry, leaving the edge free.
Bake in a preheated oven at 200°C for 20-25 minutes, until the pastry is golden and crispy.
