Homemade Chocolate Liqueur (Bailey’s style)
Ingredients:
200g dark chocolate (at least 70% cocoa), grated or chopped
400ml sweetened condensed milk
250ml double cream
300ml whisky (or dark rum if you prefer a sweeter note)
1 tsp vanilla extract
2 tbsp instant coffee dissolved in a little hot water (optional for a stronger taste)
2 tbsp caster sugar (adjust to taste)
Instructions:
Preparation of the chocolate base:
In a saucepan, melt the dark chocolate over low heat, stirring constantly to prevent it from burning. You can also melt it in a bain-marie for more control.
Once the chocolate is melted, gradually add the liquid cream, stirring well until the mixture is smooth and homogeneous.
Add the sweetened condensed milk and continue stirring to incorporate everything well.
Add the flavorings:
Add the vanilla extract and dissolved coffee (if using coffee).
Add the sugar and taste to adjust the quantity according to the desired sweetness.
Add the alcohol:
Remove the saucepan from the heat and let the mixture cool slightly.
Once the preparation is lukewarm, add the whiskey or rum, stirring well so that the alcohol mixes perfectly with the rest of the ingredients.
