Instructions:
1. In a big saucepan set over medium heat, warm the olive oil.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Once aromatic, add the minced garlic and simmer for an additional minute.
4. Pour in crushed tomatoes and tomato paste, stirring until well combined.
5. Add dried herbs – oregano, basil, thyme, rosemary, and parsley. Stir to incorporate.
6. If using sugar or red wine, add it to the sauce at this point.
7. Season with salt and pepper to taste.
8. If you like a bit of heat, add red pepper flakes.
9. Reduce heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally.
10. Taste and adjust seasoning if necessary.
Optional additions or variations:
– Browned ground beef or Italian sausage for a meaty sauce.
– Sautéed mushrooms for an earthy flavor.
– Bell peppers or zucchini for added vegetables.
– Fresh basil or parsley for a burst of freshness.
– Grated Parmesan cheese stirred in at the end for extra richness.
