- Prepare the Apple: Peel, core, and finely chop the apple. Squeeze the juice of half a lemon over the chopped apple to prevent browning and to add a hint of tartness.
2. Make the Batter
- Mix Wet Ingredients: In a mixing bowl, beat the egg. Add granulated sugar, vanilla sugar, and a pinch of salt. Mix well until the ingredients are well incorporated.
- Add Oil and Yogurt: Stir in the vegetable oil and vanilla yogurt until fully combined and smooth.
- Combine Dry Ingredients: In a separate bowl, sift together the flour and baking powder. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can make the muffins dense.
- Add Apples: Gently fold in the chopped apples, ensuring they are evenly distributed throughout the batter.
3. Bake the Muffins
- Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about two-thirds full to allow room for the muffins to rise.
- Top with Cinnamon and Sugar: In a small bowl, mix 1 teaspoon of brown sugar with a pinch of cinnamon. Sprinkle this mixture over the top of each muffin for a sweet and slightly spiced crust.

- Add Almonds: Sprinkle roasted almonds over the tops for added crunch and a nutty flavor that complements the sweetness of the apple and vanilla.
