Ingredients
- 1 tablespoon olive oil
- 1 cup diced onion
- 1/2 cup diced celery
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup milk
- 1 1/2 cups cooked shredded chicken
- 1 1/2 cups chopped fresh spinach leaves
- 16 ounces potato gnocchi
- 1 cup shredded carrots
- 1 teaspoon fresh thyme
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and celery, and cook while stirring constantly for 2 minutes.
- Add minced garlic and cook for an additional 30 seconds.
- Sprinkle flour into the pot and whisk for 1 minute.
- Whisk in chicken broth, cream, and milk. Bring to a simmer, whisking constantly, until the soup has slightly thickened, about 5 minutes.
- Add chicken, spinach, gnocchi, carrots, thyme, salt, and pepper. Stir well.
- Continue simmering for 10 minutes or until gnocchi and carrots are tender and cooked through.
- Serve immediately.
