  2. Cook the Caramel: Bring the mixture to a boil over medium heat, stirring frequently to dissolve the sugar and ensure an even texture.
  3. Heat to Temperature: Continue to boil until the caramel reaches 245°F (118°C) on a candy thermometer, then immediately remove from heat.
  4. Add Vanilla and Salt: Stir in 1 teaspoon vanilla extract and ½ teaspoon salt. Allow the caramel to cool slightly.

3. Assemble the Georgia Browns:

  1. Arrange the Pecans: Line a baking sheet with parchment paper. Arrange the cooled pecans in small groupings of 3-4 pecans, spaced a couple of inches apart.
  2. Add the Caramel: Spoon a dollop of the prepared caramel over each pecan pile, ensuring the caramel covers the nuts. Allow the caramel to cool and set.
