  1. Prepare the Potatoes:

  2. Mix the Mashed Potatoes:
    • In a large bowl, combine the mashed potatoes with the egg yolks, grated Parmesan, chopped parsley, nutmeg, salt, and pepper.
    • Mix well until a smooth dough forms.
  3. Prepare the Cheese:
    • Cut the mozzarella block into small rectangles. These will be placed in the center of each fritter.
  4. Form the Fritters:
    • Take a spoonful of the mashed potato mixture and flatten it into a patty in your hand.
    • Place a rectangle of mozzarella cheese in the center of the patty.
    • Carefully wrap the potato mixture around the cheese, forming a fritter. Repeat until all the mixture is used.
  5. Coat the Fritters:
    • Beat the 2 eggs in a bowl.
    • Dip each fritter into the beaten eggs, ensuring it’s fully coated.
    • Then, roll the fritter in breadcrumbs to cover it completely.
  6. Cook the Fritters:
    • Heat oil in a skillet over medium heat.
