- Prepare the Potatoes:
- Peel the boiled potatoes and mash them until smooth, ensuring there are no lumps.
- Mix the Mashed Potatoes:
- In a large bowl, combine the mashed potatoes with the egg yolks, grated Parmesan, chopped parsley, nutmeg, salt, and pepper.
- Mix well until a smooth dough forms.
- Prepare the Cheese:
- Cut the mozzarella block into small rectangles. These will be placed in the center of each fritter.
- Form the Fritters:
- Take a spoonful of the mashed potato mixture and flatten it into a patty in your hand.
- Place a rectangle of mozzarella cheese in the center of the patty.
- Carefully wrap the potato mixture around the cheese, forming a fritter. Repeat until all the mixture is used.
- Coat the Fritters:
- Beat the 2 eggs in a bowl.
- Dip each fritter into the beaten eggs, ensuring it’s fully coated.
- Then, roll the fritter in breadcrumbs to cover it completely.
- Cook the Fritters:
- Heat oil in a skillet over medium heat.
- Fry the fritters for 6-7 minutes, turning occasionally, until they are evenly golden brown and crispy.
- Serve:
- Drain the fritters on paper towels to remove excess oil.
- Serve them hot for the best experience of the melted mozzarella inside.
