Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced red and yellow bell peppers. Sauté for about 5 minutes until they are slightly softened.
In a rectangular glass baking dish, layer the cooked chicken fillets and sautéed bell peppers.
Sprinkle the shredded cheddar and mozzarella cheese evenly over the top.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley if desired.
