Instructions:
Cook the pasta in salted boiling water until al dente. Drain and set aside.
Make the cheese sauce: In a saucepan, melt butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk, stirring constantly until smooth.
Add cheese & seasoning: Lower the heat and stir in cheddar, Red Leicester, mustard powder, salt, and pepper until melted and smooth.
Combine & assemble: Mix the cooked pasta and chopped ham into the cheese sauce. Pour into a buttered baking dish.
Topping: Sprinkle with breadcrumbs and paprika for a golden, crispy finish.
Bake: Preheat the oven to 375°F (190°C) and bake for 15–20 minutes until bubbly and golden brown.
