1 cup all-purpose flour
¾ cup whole wheat flour
1 tablespoon baking powder
1 teaspoon baking soda
¼ cup roasted peanuts, chopped (optional)
Directions
1. Preheat the oven to 350F.
2. In a large mixing bowl, whisk together the milk, eggs, sugar, and peanut butter vigorously until smooth.
3. In a separate mixing bowl, whisk together the flours, baking powder, and baking soda.
4. Add the dry ingredients to the wet and fold just until the flour disappears.
5. Add the chopped peanuts and fold 3 times.
6. Line a 9×5 loaf pan with parchment paper and spray with non-stick spray.
7. Add the batter to the prepared pan and bake 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Allow the bread to cool in the loaf at least 5 minutes before turning out onto a wire rack to cool completely. Slice and serve!
