4 boneless, skinless chicken breasts
1 cup crushed Doritos, flavor of your choice
4 oz cream cheese, softened
6 strips of bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
1 tsp onion powder
1 tsp garlic powder
Salt and pepper to taste
2 tbsp olive oil
Directions
1. Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
2. In a small bowl, mix together the cream cheese, crumbled bacon, cheddar cheese, onion powder, and garlic powder until well combined.
3. Slice each chicken breast horizontally to create a pocket. Be careful not to cut all the way through.
4. Stuff each pocket with the cream cheese mixture, then secure with toothpicks if needed.
5. Season the outside of the chicken breasts with salt and pepper.
6. Place the crushed Doritos in a shallow dish. Brush each stuffed chicken breast with olive oil, then press into the Doritos crumbs to coat. Top with more chopped bacon if desired.
7. Place the chicken breasts on the prepared baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the crust is golden and crispy.
8. Let rest for a few minutes before serving.
Variations & Tips
You can easily customize this dish to suit your taste or use what you have on hand. Swap out Doritos for another type of chip for a different flavor, or use turkey bacon for a lighter option. For a spicier kick, add some chopped jalapeños to the cream cheese stuffing, or use a spicy chip variety. If you’re not a fan of cream cheese, ricotta or goat cheese could make yummy alternatives.
