This hearty casserole is a perfect set-it-and-forget-it meal for busy weeknights. Packed with tender chicken, fluffy potatoes, and crispy bacon, all smothered in a cheesy sauce, it’s sure to be a crowd-pleaser.
Ingredients:

Crumbled bacon 4 pieces
Skinless, boneless chicken breasts 1/2 lb, diced
Russet potatoes 4 large, cut into cubes
Onion 1 medium, chopped finely
Cheddar cheese, shredded 1 cup
Chicken broth 1 cup
Garlic powder 1 teaspoon
Paprika 1 teaspoon
Salt and pepper To taste
Sour cream 1/2 cup
Chopped fresh chives (optional) 1/4 cup
Instructions:
In your slow cooker, layer half of the chicken, onions, and potatoes.
Sprinkle with half of the crumbled bacon, garlic powder, paprika, salt, and pepper.
Repeat the layers with the remaining chicken, onions, potatoes, and spices.
Pour the chicken broth evenly over the ingredients.
Cover and cook on low for 6-8 hours, or until the chicken and potatoes are cooked through.
About 30 minutes before serving, sprinkle the shredded cheddar cheese on top.
Recover and cook for an additional 30 minutes, or until the cheese is melted and bubbly.
Before serving, stir in the sour cream and garnish with chopped chives, if desired.
