Instructions:
Prep the Cucumbers:
Wash the cucumbers and pat them dry. Peel them if desired, though it’s not necessary for Kirby cucumbers.
Slice the cucumbers thinly. You can use a knife, mandoline, or spiralizer for different textures.
Optional: Add Red Onion:
If using red onion, thinly slice it and add it to a bowl with the cucumbers.
Make the Creamy Dressing:
In a separate bowl, whisk together the sour cream, mayonnaise, chopped dill, lemon juice, salt, and pepper. Taste and adjust seasonings as needed.
Combine and Chill:
Pour the creamy dressing over the cucumbers and red onion (if using). Gently toss to coat everything evenly.
Cover the bowl and refrigerate the salad for at least 30 minutes, or up to several hours, to allow the flavors to meld.
Serve:
Serve the chilled creamy cucumber salad as a side dish or appetizer. Garnish with additional fresh dill if desired.
