Instructions:
Preheat oven: Preheat your oven to 450°F (230°C).
Prepare okra: Trim the ends off the okra pods and cut them into 1/2-inch pieces. Thoroughly dry the okra pieces with paper towels.
Toss with lemon juice: Place the dried okra in a large bowl and toss it with the lemon juice.
Add remaining ingredients: Pour the olive oil, minced garlic, sliced jalapeños (if using), chopped fresh rosemary, chopped fresh sage, chopped fresh oregano, chopped fresh thyme, and red crushed pepper into the bowl with the okra. Season generously with salt and black pepper to taste.
Combine: Toss all the ingredients together in the bowl until the okra is evenly coated with the oil, garlic, herbs, and spices.
Arrange on baking sheet: Pour the seasoned okra onto an 11×15 inch baking pan, spreading it out in a single layer. Ensure the okra is not overcrowded to allow for even roasting and crisping.
Bake: Bake in the preheated oven for 20-25 minutes, or until the okra is golden brown and crispy on the edges. You may want to toss the okra halfway through the baking time to ensure even cooking.
Serve: Remove the roasted garlic okra from the oven and serve immediately as a flavorful side dish.
