Revealing the secret that no one knew:  Here’s how to keep chicken intact and fresh for 12 months without resorting to the refrigerator.  We are not talking about utopia, but about reality. Do you know how to proceed? We are sure that you will thank us and you will also stock up on this noble meat

The secret to keeping chicken fresh and tasty, without altering its flavor by storing it in cold environments such as refrigerators, is the following. Get some chicken thighs from a butcher shop or supermarket and  wash the meat well. .

Once this step is done, equip yourself with paper towels and  let the chicken thighs lose excess water . Grab a large container. Now you will need salt (for 4 kg of poultry you need four teaspoons of this ingredient), which you will begin to sprinkle on the thighs.

Also add  a little black pepper and 4 tablespoons of vinegar , and if you prefer, also a pinch of paprika . Mix everything with your hands. Meanwhile, take four onions, which you will cut into thin strips, and a bunch of parsley, which you will chop finely.

Combine the two ingredients at this point. Meanwhile, take a clean, dry glass jar, preferably one liter in capacity, and start putting onion and chopped parsley inside. Next, add the  previously prepared chicken thighs.

Once this is done and the legs have been placed in glass jars (as many as you consider necessary),  close them tightly with their lids . At this point, get a rather large pot with a cloth towel or piece of cloth in the bottom of it and place the jars of chicken on it.

Fill the pot with water until it covers the jar and  put the pot on the heat and the water to boil. Cook over low heat for 5 or 6 hours and let cool. Et voila, everything is ready.

You will see that  a gelatinous meat broth will be created in your jars, allowing you  to keep your chicken out of the fridge for up to 12 months . Did you know this technique? It is one of the most used by chefs to avoid waste in the kitchen.
